During the late autumn and early winter when most leaves have fallen and there is little color in the landscape, there is nothing quite so striking as a persimmon tree, with bright orange fruit hanging like ornaments from its graceful bare branches. Use to anchor a large border, or plant in groups to create an edible screen with multi-season interest.
Provide enriched, loamy, well-drained soil. Shelter from harsh winds. Water deeply and regularly during first few growing seasons to establish an extensive root system; once established, reduce frequency. Apply a general purpose slow-release fertilizer before new growth begins in spring. Winter chill requirement: 200 hours below 45°F.
History
Though not recorded botanically until the late 1700's, Diospyros kaki is the most widely cultivated species of its genus, and is among the oldest in cultivation. The fruit, historically called "kaki", has been in use in China for more than 2000 years. Some rural communities believe the fruit has a mystical power that cures headaches, back and foot pain. Oriental persimmon trees are typically grafted on to one of three rootstocks: common persimmon (D. virginiana), oriental persimmon species (D. kaki), or caucasian persimmon (D. lotus). The former (D. virginiana) lends a dwarfing habit but tends to produce undesirable suckers (LaRue et al., 1982). The latter two species are most commonly used in the nursery trade. Monrovia-grown 'Hachiya' persimmons are grown on the hardy rootstock of either D. kaki 'Jiro' or D. lotus.

The flesh of unripe persimmon fruit is soft and astringent due to high concentrations of tannins. Hachiya is the most popular of the astringent persimmons, with large, oblong and conical fruit that is considered the best for cooking. When it is fully ripe, the fruit looses its astringency and becomes sweet and edible. Mature fruit can be picked and frozen, then thawed to finish ripening.
