Lore | Hydrangea serrata is referred to occasionally as tea of heaven shrub, as it can be used to make a sweet tea. In Japan, ama-cha is an herbal tea made from the leaves, which contain a substance that develops a sweet taste (phyllodulcin). Fresh leaves are crumpled, steamed, and dried, yielding dark brown tea leaves. Ama-cha is mainly used for traditional ceremonies on the day thought to be Buddha's birthday in Japan. In Korea, Hydrangea serrata is used for a herbal tea called sugukcha. |

Prefers fertile, moist, well-drained soils. Tolerates full sun only if given consistent moisture. Supplemental water may be needed in very hot weather. Soil pH affects the flower color; intense pink in slightly acidic to alkaline soils, and bluish in highly acidic soils. Blooms on both new and old wood; prune to shape immediately after the spring bloom. Prune out weak or winter-damaged stems in early spring. Fertilize in spring with a controlled release fertilizer. Protect to minimize damage in harsh winters if grown in zone 5.
